Sean Collins - Founder & Director

A second-generation Caymanian, Sean founded Mise en Place & Co. in 2002 after studying Culinary Arts at Johnson & Wales University. What started as restaurant-quality dining in people’s homes has grown into a family of brands serving Cayman every day.

Sean remains closely involved in the company, focusing on growth, partnerships and community relationships. Outside of work, you’ll likely find him on the water or on the golf course.

Angelique Collins - Director & Mise en Place Events Manager

Originally from Sweden where she trained in hotel and hospitality management, Angelique moved to Cayman in 2005 and has since helped shape Mise en Place’s events division into what it is today. From elegant weddings to large-scale corporate functions, she brings creative flair, careful detail and elegant execution to every event. 

Gardine Euter-Miller - Sous Chef

With more than 21 years in the culinary industry, Chef Gardine is known for blending Caribbean flavours with modern techniques. Her cooking reflects both precision and creativity, inspired by chefs like Bobby Flay and Gordon Ramsay.  

In the kitchen she brings energy, mentorship and a genuine love for the craft, helping younger chefs while maintaining high standards.  

Steve Henshaw - Bake Shop Production Manager

Trained at London’s National Bakery School, Steve brings decades of baking expertise to The Bake Shop. After 26 years in Cayman, his breads and pastries have become staples across the island.  

His career has taken him from professional kitchens to baking for Buckingham Palace’s garden parties; experience he now brings to producing consistent, high-quality bakery products for the Cayman community.  

Tallulah Mansfield - Marketing

Tallulah leads brand and marketing across the Mise en Place & Co. family. She studied Business Management in London and brings more than eight years’ experience in marketing and brand strategy.

Having called Cayman home since 2018, she focuses on helping each brand connect more closely with its audience while maintaining a clear, consistent voice across the group. A food and travel enthusiast, she also holds a WSET Level 2 wine certification. 

Joni-Ann Lawson Hewitt - Bake Shop Supervisor

Joni-Ann holds a Bachelor’s degree in Food & Beverage Management from the University of Technology Jamaica and has over 20 years of industry experience.  

She is responsible for keeping our daily bakery production running smoothly, balancing organisation, consistency and a hands-on approach that supports both the team and the quality of every batch.

Justyna Hachulska - Managing Director

With more than 25 years in hospitality across Ireland and London, Justyna brings international experience and strategic leadership to Mise en Place & Co. Her background spans five-star hotels, private members’ clubs, corporate catering and Michelin-starred restaurants, supported by an MBA in Business Administration and Management.

She focuses on strengthening operations, developing teams and planning long-term growth while preserving the company’s values and community-driven spirit.

Willie Joseph - Executive Chef

With nearly twenty years of experience leading fast-paced kitchens and large-scale catering operations, Chef Willie is the steady hand behind many of Mise en Place & Co.’s kitchen services. He thrives in high-pressure environments and has a talent for turning complex events into seamless dining experiences for both guests and our team.

Sake Van Der Wal - Yum Manager

Sake brings over 15 years of culinary and hospitality experience to Yum, where he leads the team behind thousands of school meals each week. His chef background informs a practical approach to nutrition, focusing on balanced meals that children actually want to eat, while working closely with the Cayman Islands Government, private schools and PTAs to continuously enhance the programme. Outside work, he’s an enthusiastic pop-culture fan.  

Courtney Bracke - Finance

A chartered accountant registered with the South African Institute of Chartered Accountants, Courtney studied at the University of Cape Town and brings over nine years of financial management and reporting experience across both corporate and smaller business environments.

She oversees financial operations across the group, helping ensure sustainable growth. Outside work, she’s usually running or walking her dog around the island.

Arpitha Sunny - Events

Trained in architecture and design in India, Arpitha approaches events with both structure and creativity. With more than six years’ experience planning celebrations, she focuses on combining thoughtful design, food and atmosphere.  

Since moving to Cayman in 2023, she has helped bring weddings and special occasions to life, creating experiences guests remember.
